Favourite career memory?
Getting promoted to my first Chef de Partie position in France when I was 21… I then realised I could actually be a Chef.

Favourite food?
Mothers fish pie, Raclette and a good spicy curry.

Dream restaurant to visit?
The Fat Duck….to see what all the fuss is about.

If I wasn’t in hospitality I would be…
Hugh Hefner.

Prior to Kingsleys where did you work?
I’ve worked at Kingsleys for 17 years but prior to that I worked in a number of other restaurants like Armstrong’s in North Sydney and Summit Restaurant.

Favourite career memory?
There are so many but standouts would have to be, when The Chaser’s War on Everything came to Kingsleys on a Friday lunch with a live Steer, holding a knife and asking every single customer what cut they would like. It caused a big stir amongst the guests and attracted a lot of media attention. Also having served Tom Cruise and Ewan McGregor.

Favourite food?
Foie Gras, Beef Carpaccio, a good Steak Tartare and anything Mexican.

Dream restaurant to visit?
2nd Ave Deli in NYC, sandwiches are supposed to be out of this world!

If I wasn’t in hospitality I would be…
Ideally I would have loved to have worked with horses and on the land.

I helped transform Delicado from a fresh produce deli into a restaurant and worked there as the Manager.

Favourite career highlight?
Looking after Lucas Neill and Tim Cahill after their great performance in the 2006 World Cup. I’ve served so many famous people but the most famous have been Frank Sinatra, Sammy Davis Jr and Liza Minnelli.

Favourite Drink?
Burgundy from Chassagne-Montrachet.

If I wasn’t in hospitality I would be…
A pro golfer. I started off as a chef, I would cook all night and play golf all day and even now if I’m not at work I’m probably playing golf.
